While admittedly I am probably not the best person to ask as we have more than a few iguanas living with us, I have to say that life with an ADULT iguana is far more disrupted than when they are juveniles.
When iguanas are small and can be comfortably housed in an aquarium type enlcosure, it can be less than difficult to find someone willing to come over and feed or allow you to bring the ig to them. I have found that most people, who do not have iguanas themselves and even some who do have juveniles, are very intimidated by the size of an adult.
As far as vacations .... with one, I'd say yes it would be possible to find care for him or her and go. More than one and you should probably plan on traveling with your iguanas, if you can find a hotel who will allow them. In our area we have yet to find a kennel or pet sitting service that will take them.
As for short term day trips, over nighters, etc. the use of timers and thermostats to regualte temperature and leaving a larger portion of food should be fine. It'd be best though if you could atleast find someone to stop in and check on them at least once while you are gone.
