I did find a place that could give you the ratios for the Kohlrabi (raw and cooked). It is:

That place has a search engine. I ran it for rapini but it couldn't find anything. So then I tried to figure out what rapini is! LOL Okay...so it is brocolli raab or brocolli rabe. But neither of those names were found either! Rats!!

Hope that addy helps some. And I'll be on the lookout for the rapini (made me have a sudden urge for Italian food LOL)
