You may want to begin more research tomorrow, Dakota. The "sneezing" you describe is usually common in iguanas. This is how they expel salts from their bodies. Have you noticed any white deposits on the tank glass at all ?

As far as the 100 gal tank itself, there really shouldn't be a problem with it as long as you can keep heat and humidity levels where they should be. A relatively easy way to do that would be to make a cover of plexi glass that could fit around your light/heat sources - be careful because it WILL melt/crack. In fact, you should get at least two years of use out of the tank before you have to start thinking about building another enclosure.
You should lose the moss and bark substrate, though. Depending on the type of moss, it COULD very well be toxic to your ig. The bark can also be easily ingested and cause impaction in the bowel. We've gone with a closely woven indoor/outdoor carpet for everyone's tanks/enclosures here. Cut two pieces, that way when one needs to be cleaned the other can immediately replace it.
Diet - as long as you have easy access to fresh greens and veggies I'd lose the "iguana food" or at least use it sparingly. Around here we only use fresh stuff for salads and they are prepared daily. "Iguana food" is used only on occassion. What are you feeding for veggies and greens ?
You mention UV heat lights and reptile lights. Does that mean that you are using some kind of combination bulb that supplies UV and heatfrom the same bulb? What are the "reptile" lights? How far away from your ig is the UV source ?
