How long are they in the cage before she eats them? The veggies wont get stale that fast. And some igs prefer to have their leafs and vegs a more on the dry side instead of watery. I personally wouldnt feed every other day. As I know my Iguana eats twice a day, has always ate twice a day and thrived on it. What are you feeding her? Maybe she doesnt like it!
