Welcome to the forum-- and I'm happy you cared enough to rescue this poor creature!
Just like you did with the unruly snake rescues, so must you do with the iguana (take her out and spend time with her) It is the ONLY way you will change her behavior at this stage.
It does sound like she could be egg bound and a vet trip as well as a very fresh stool sample (taken to the vet for testing) are reccommended).
She may be changeing colors for many reasons including improper lighting/sunlight (needs zoomed bulb--Iguana light 5.0) and some direct unfiltered sunlight whenever you can manage outdoors time. Other than that, stress and bad health can cause color changes. AND as iguanas, get older they sometimes dull in color to more browns than greens.
The pellets and spray are useless. She needs fresh collard greens, mustard greens, turnip greens, dandelion, escarole, watercress, squashes, sweet potatos, blueberries, melon (that's the start of a good variety). I will post links below for you to check out some good care/health pages. These sights are a must to bookmark for any iguana owner. We all refer to them even after years of iguana keeping. Also, James Hatfield has a great book called "the giant green iguana manual"
