Some areas may shed twice as much as others. But it's a good sign if your iguana is shedding on a continuous bases. If your iguana is still young and it's not shedding, there is reason to be concerned, this can be a bad sign that something might be wrong.
Once Harry is back to three bowls a day, he will be firing up his shedding process again and will probably not stop until late fall.
I don't think there is a starting point to shedding, it's more based on what part of your iguana is growing and needing the required shed to make room for the growth. We have seen a number of ours shed their head area and it's not a week or two and start shedding it again.
The best view to take in regards to shedding is.....if they're shedding all the time....then they're growing, which is a healthy sign in that area.
