Some iguana's heads are dark or black because its their coloration, its not always a heat issue. Just like the stripes, blotches, and spots on iguana's, the head has many different colorations.

I've attatched a picture which shows the color on top of Tarzan's head. Its not too clear, but it gives you an idea.
