You might want to try contacting a "small" marble/tile shop. Not sure if they'd have scrap countertop or not. Only reason I mention it is my brother works for one as a stone cutter and you should see what they consider scrap marble and granite. Suffice it to say that my mother got a new walkway paved with granite "scraps" one summer a few years ago. Never know but what could it hurt ??
Other option could be to use concrete board for the enclosure and lay a laminate directly to it. Just thought of that one and haven't thought it through so don't hold me to it...LOL
