What kind of alfalfa are you using? My guys don't like the pellets, but will eat the hay with much enjoyment. They sell small bales of alfalfa hay in the small animal section of most pet stores and even Wal Mart. The fresher the better, it should be very green and smell nice and fresh. Pick out the stiff stems before feeding. If you have a feed store near you that is also a good place to get fresh alfalfa, and it's usually cheaper(if you don't mind a whole big bale of alfalfa...). :)
You can also grow your own fresh alfalfa. They sell the seeds for sprouting at most health food stores, very inexpensive and pretty easy to grow.
As far as his pickiness about greens goes, you could try chopping the greens really small and mixing them into the salad so he can't pick out individual pieces.
