Salad suggestions please

Hello, Ive been feeding Gwaners the following salad for a few years and she loves it, but, I want to add some different stuff to it,what do you guys recommend? Speghetti squash, butternut or acorn squash, a little asparagas, bell peppers, tons of greenbeans, zucchinni, yellow squash and cantaloupe. I put all this in the food processor and shred it. I add fresh greens to it right before serving. I used to use a combo of mustard and collards, but, Ive had trouble finding good mustards since Ive moved to VA, I feed mostly collards now.
