Iguana temperment is difficult to judge, mine was like both of yours depending on the day, but she had a previos owner and may not have been captive bred, I don't think you'll have problems, if an iguana really doesn't like something they will hiss an swin thier tail at it.
For the shedding question, keep letting them swim in the bath tub, they love it and warm water helps them shed faster, there's nothing wrong with an iguana shedding for close to a week at times. good luck- Joel
