Does anyone have any ideas on how I can tame her to make her available for adoption or at least be able to put my hand in the cage w/out using heavy duty leather gloves?

Sure it's a handful! And Kudos to you for taking in those in need of a home. One thing about gloves, is they make your hands even scarier to the IG quite often. The infamous trade off, feeling safe, versus potential progress with the IG. Wish you lots of luck, and patience. Also, have you tried carefully feeding by hand? Can create a positive association with your hands and the IG.
