Not sure I've heard about the UV exactly, but I think slowly introducing them to natural sunlight is primarily because, when their in full sunlihgt their whole body warms up alot quicker then under a spot type heatlamp. Therefore they have a greater chance of overheating more then anything.
and the other thing I've heard is the effect of the uv from the sun can alter their attitude quickly, such as a nice guy can turn into a mean guy.
