The experiences I've had-- it means she is afraid and nervous. My last iguana did the same thing after he was scared-- they turn more pale. I've also seen them do it when they've had too much sun and are stressed out (& too hot). They can turn darker when exposed to the sun and trying to heat up-- this is not a bad thing. Also, the pale scared color change can be a delayed reaction at times (in other words, she could have been scared 5 minutes ago, but it took that long for her to change and it will take awhile for her to change back). You will notice that if you grip her and take your hands away when she is turning pale, you will see dark bruise looking marks where your fingers were too. Just keep taking her out anyway and talking gently and feeding her some of her favorite veggies or fruits by hand. After awhile she shouldn't react so dramatically to you.
