I worked at a ranch about three years ago and the same thing happended to one of our show horses. It happened so fast with the same symptoms ( fluid running out of the nose and mouth, and thrashing and then going down hill quickly) so even in a large animal where it is a little more common we did not know what the problem until after he passed away.
Sorry to hear about Q. Sounds like it was just one of those weird things you could not have stopped :)
