sounds like you're going about it in the right way, nice + slow, offering treats, etc ... and yeah, shedding can be a grouchy time, not to mention egg time, so it might just be a phase she's going thru right now ... try + do the same things at the same time every day, so she knows what to expect + when ...

does she get to spend time out of her enclosure? some supervised roaming + exercise on a daily basis can do wonders for a grouchy mood ...

really tho, sounds like you're going at it the right way ... just keep it up + know you need lots + lots of time + patience!
