In Reply to: escarole, endive, chickory, bok-choi, kale--what do they look like? posted by IG27 on March 03, 2000 at 09:01:12:
i think BabyHerp has a good link to a site with pix ... can't find it at the moment ... grrrr ... but here's some info anyway ...
endive + escarole pic
from http://www.botany.com/cichorium.html (no pic)
Escarole is a flat-leafed cousin of curly chicory and has a similar bitter flavor. The leaves are thicker, flatter and greener, but it also has a yellow heart. ......
Escarole or Curly Endive (C. endiva) - C. endiva is another vegetable commonly known as Escarole or Curly Endive. They are generally the same thing, but Endive has cut and curled foliage and Escarole has smooth, wide leaves. Restaurants often use Endive to line salad bowls or mix with lettuce. The leaves are chewier and more substantial than those of lettuce.

there are diff kinds of kale ... one looks alot like mustard greens, it has the same really curly ends, but it is a deep, darker green, not the bright, lighter green of mustard greens ... there is "flowering' kale, which is the same shape as the green kind but it has either a white or red/purple "heart" ... (couldn't find any good pix)... then there's the kind that iZ likes, around here it's labeled as "Lacinato" kale ... it looks more like chard, but it's leave aren't quite as "thick" as chard and is *all* green*...

the best thing is to hunt down the produce manager and ask ... the stores around here have finally started to label the individual bunches of greens/produce and it's great!
best wishes + good luck! (+ hope my links work!)
