i don't think a decrease in appetite for a day or two is anything to worry about ... especially when they're still growing, their appetites can vary from day to day, or week to week ... as long as he's eating/pooping on a semi-regular basis, he's prob'ly fine ...
here's a couple links for you to check out on ig care and specifically check out the diet recommendations ... while your's is a *major* improvement over what he was eating, it could still be improved ... try to 'wean' him off the fruit, igs don't need very much ... (should be more of a 'treat' or maybe desert ... *grin*)
make any dietary changes rather slowly, over time ... igs tend to *hate* any change + you really don't want him to totally quit eating in protest!

that is *great* that he's gaining weight!!!! *way to go*!!!! glad he found his way to you, (+ you to us!) ~ keep up the good work!
