I would suggest looking at getting a hand-held shredder. They don't cost much...I think under $5.00. Warning: when using this device watch out for your finger tips.....they can shred too!!!
We have one that has a handle device that you stick the veggie on it before starting. I'm not quite up to those guys on TV....but I'm working on it!! lol
We use ours for the following:
Carrots
Squash ( some not all)
Parnips
Sweet potatoes
we also use a hand chopper too, it works great for chopping up the following:
Beans
radishes
peppers
and a few others...but my mind is going blank.LOL
I believe the hand chopper is around $10.00 to 15.00 and is worth it.
