Well, I'd say just to feed her until she stops eating. We offer our igs food about three times a day or more, and they usually will always eat at least a snack from the plate. Since they don't eat fat, animal protein, or really caloric foods, it's almost impossible to over-feed an iguana. They will eat until they are filled and then no more.
Don't worry about getting the "right amount" but rather feed her until she seems full. This might take you standing by her while she eats a few times until you get a feel for how much she can eat in a sitting. Once you see how much she can eat at a time, you can prepare the right amount each time, increasing it as needed.
You could also improve the variety of what you're feeding. Your ig diet sounds okay overall, but I'd also use collard greens, dandelion greens (if you can find them) and more kinds of orange ("winter") squashes, like acorn squash, spagetti squash, and also some yellow crook-neck squash (my igs love them) and also some zucchini. My igs also love peppers--not the hot ones, but green bell peppers, and sweet yellow and red peppers. As for fruits, try blueberries (which happen to be my igs' absolute favorite!) and raspberries. They also like strawberries, figs, papaya, and even occasional bits of oranges. They LOVE bananas, but that should not be fed regularly. Just as an occasional treat. (They have too much phosphorous, if I remember right.)
