Chris, are you SURE you've researched iguanas? Like someone said (I think it was a member of the Lola and Harry household, can't remember which), you really are asking some pretty basic questions.
Your iguana is getting used to its new home, it's not gonna stuff its face right away. Just keep feeding it on a regular basis, give it time alone with its food and eventually it'll start eating.
