If she just quit eating 2 weeks ago, I would suspect that she won't lay her eggs by Monday. If she does lay her eggs before then, I suggest that you take her to the vet monday, anyhow, to determine if she laid all of her eggs without retaining any or hurting herself in any way. If she laid all of her eggs without a problem, then, yes, you will need to wait until her is gravid again to have her spayed.
Just to let you know that you are not alone, I thought I would share with you a story about the first time one of my girls became gravid. From the day I noticed her food intake decreasing, to when I noticed her digging, to when she finally laid her eggs, I was a nervous wreck. I was especially afraid because Shakai had had lousy care in the past, and she was stunted at about 10.5" svl. I was sooooo afraid that she would have a problem. I hovered over her every hour I was home, and I often called my significant other at lunch while I was at work, to see if she had laid her eggs yet. Finally, during what I soon discovered to be the last week, I called my vet (again; we spoke at least once a week the whole time Shakai was egging) and told her I had decided to have Shakai spayed. Since it wasn't an emergency, we set it up for 2 days after we spoke. That night I came home, Shakai stayed in her nest box all night. When she came out the next morning, thin and exhausted, I was the grandmummy of 25 (unfertilized) eggs! We took Shakai to the vet, and she turned out to be absolutely fine. I have since mellowed about spaying, and now my philosophy is "if she ain't broke, don't fix her." But it is a matter of personal choice. :) Good luck, and feel free to email me if you need a good hand-holding. :)
