I commend you for doing research before getting either one. As for which one is easier to care for I guess that would depend on personal preferences. Yes igs do get rather large, however they don't eat animal protein making pet crickets unneccessary. So I guess you have to decide for yourself what you are willing to put up with.
I can speak a bit as to temperment my iguana, unfortunately I have no experience with waterdragons.
I have a 6 year old female ig. She is extremely well behaved. She has only once swiped at me with her tail. And that was shortly after I got her when I startled her. Other than that she has never even appeared threatening. I have kids ages nine, 22 months, and newborn; the two older ones love to approach and pet her when she is out freeroaming during the day. She handles their attentions quite well. I have never had problems with her going through a season. For some unknown reason (she is healthly) she has never been gravid. Dealing with igs I have been surprised by how much personality they have.
As to appearance Mel is pale green with touches of orange, turquoise, and (of course) her brownish/black stripes. I think she is beautiful.
I would suggest, especially if you are a female, and one of your concerns is seasonally ill tempered behavior that you get a female ig. They can be moody (mine isn't), but from what I understand it is not normally as severe as what some males go through. Although, many of the ig lovers on this forum that have males do not have problems with them. With iguana's you get out what you put in. In other words if you are willing to invest the time and attention you will end up with a wonderful pet in the end.
I also suggest (if you decide to go with an ig) that you consider adopting an older ig. Mel was 4 1/2 when I got her and I have never regretted the decision. Of course I was lucky and she was well behaved from the start. They may be an adjustment period with many adopted igs.
