Carrots and Vitamin E supp's are good for the skin and eyes, so shredded baby carrots mixed in the food are the way to go. Though debated by some folks, yogurt can be healthy, but must be given once a week, or so. Since it does contain some protein, it may not be the best candidate.
Keeping them hydrated will also prevent skin problems, therefore a healthy skin, therefore a nice colored skin.
Though UV lights are nice, REAL sunshine can make any iguana look great. Males in breeding season can be fenomenal.

It mostly depends on the individual iguana. Keep it healthy, warm and happy. Just one lack of those three things will make their skin darker, browner.

Here's a lil idea for you:
friend of mine, buys those jel-caps Vit. E supplements. He oozes the vitamin out, and massages it on the iguanas skin. The vitamin E is naturally absorbed, and won't hurt the animal if licked. This is done every other day.

Though there is no proof that it actually works, i must admit his iguana is one of the best looking i've seen. But like i said, it may, or may not be, the v. E on the skin. Try the diet first, then the little trick with the gel caps.
Might take a shedding or two to be sure if any improvements have occurred.
