Your female was probably hibernated with very little water available. Let her drink as much as she likes...
However use caution and call the previous owner to see the temps she has been at...(I would guess high 50s and lower 60s easy?). Be very careful of bringing her out of hibernation rapidly. A jump from the mid 60s to the mid 80s within a few days isn't very healthy for your animal.
Also, don't worry about her eating soon...she is plenty hungry and will eat when she is ready..
