I agree...if you can get this little guy to accept a varied, quality diet you will be much better off in the long run. Rodents can be a primary diet source, however, you do want to mix it up with quality fish (I, too, prefer minnows obtained from reputable and clean facilities), freshwater shrimp and crayfish, and even small quail. At your caiman's age, it should have no problem taking fuzzies so I would go that route rather than pinkies which have much less nutritional values for a fast growing croc. In terms of feeding schedules, we feed our youngsters 3-4 times each week while our adult is cut back to two feedings per week or as needed (dictated by weight and appearance).

:About 3-4 or one or two fuzzies. You dont want to just do rodents though but supplement with crickets dusted with a vitamin powder of some kind, mealworms and waxworms if it will eat them, fish (stay away from goldfish and other oily fish like herring, stick to minnows of some kind or maybe ocean perch). Stay away from human food like hotdogs and such. Chicken is ok just rinse it off first before feeding. Can also try beef hearts as a occasional treat.
