If an adult was to get you by a finger and got good penetration to the bone and twisted or thrashed, it's possible that a finger could come off. A 5 foot long crocodilian of any species has the potential to do a lot of damage.
In terms of force, I've never read of a scientific measurement being done on either of the dwarf caimans.
