Most likely you, as you thought, are seeing their shed skin. They do molt and after they molt, they leave behind an exact copy of themselves which makes it look like a dead cricket. I had the same problem a few years ago. I was wondering how my crickets were dying, yet I found that those white crickets were really crickets that had just shed their skin and needed the new skin to harden. Andy
