I would give as much space as you can. At least four feet high, and for 2-3 at least 4-5 feet wide. The more space the better. As for building your own, home depot--they'll even cut the wood and the plexi for you. I would do plexi over glass for weight, but plexi does scratch easily. Coated screen is always an option.
I dont use a misting system so I cannot help you there.
As for materials such as fake plants and vines, check out Hobby Lobby if you have one--and hit them on their 1/2 off sales.
