My black rat snake does that because he doesn't like being picked up. Noisy breathing can also be a sign of a respiratory infection, but if he does it every time and it never gets worse, I think it's just 'hissing'. By the way, there's a ratsnake forum which is more where the ratsnake owners hang out, this one's basically just corns.
