If you're using CDX plywood I see no point in paying for any type of clear coat. CDX will look a lot better with a solid coat of paint and your choices will be much cheaper.

If you use epoxy, I see no reason whatsoever to use tile. Epoxy coated over the plywood will be a much easier to clean surface than tile - even if it has a layer of epoxy over it.

I'm not sure which epoxies would stick to tile.

Be careful when picking out your CDX plywood - it it very suseptible to warping and is rarely straight.
