Leopard geckos are hardy and easy to breed. Adults are easy to handle as well. African fat-tailed geckos have similar dispositions, although they tend to be little more aggresive. I highly recommend day geckos (genus Phelsuma) as well if you can get them at a reasonable price. They are perfect for someone with a little experience and a willingness to do some research. A thirty gallon tank would also make a nice home for some of the large anoles, although it's probably a little too small for a knight anole.
