He probably hissed at you cause he hasn't seen you for a couple days and needs to reaquant himself with you. I have a question, did you leave his lights on all the time while you were gone or are they on timers? If the former, having light suddenly for 48 hours straight has probably freaked him out. I would give him a day or two to get back into routine again. Regular soaks is good too to ensure he gets hydrated. You can also try offering him pureed carrots or squash by putting a bit on the end of your finger or babyspoon and offer it to him. If he gapes and hisses at you, just rub a little bit of the carrot on his lip or drop a bit on his tongue...the taste should inspire him to get more.

If he continues to not poop and doesn't start eating again I would take him to see the vet to make sure nothing serious is happening.
