pickie beardie -need help

Hey everybody!
I have a brearded dragon at about 18 months, a female - i think, not 100% sure...

Anyway, she's a little "pickie" when it comes to eating veggis... She eats lettuce, she doesn't love it, but she eats it. Now it's spring here in Sweden so she gets her favorite veggie, dandelions. She loves those, actually - she comes running when I serve it to her. But we only have fresh dandelions for a couple of months.. And she can't just eat lettuce, can she?
I've heard that beardies should eat more vegetables and less crickets when they're getting older.. But she doesn't, she preferes crickets and mealworms and some additional pinkies now and then..
What should I do to get her eating all veggis i serve?

Please anwer, im in the need of help
