Practice adding more medium to your mixture... or when you are making it add only little bits of water til the mixture looks like mashed potatoes (ie can't se flakes as well as even color for those using the stuff that turns blue) and you can still turn the medium over and not have it fall out (thats how I do it).
If its too wet in general, try using a more ventilated lid for a couple days.
