A cactus question

My guess is that when the Chuckwalla's eat and like it, your uro's will do also. They don't seem te be poisonous or so, otherwise the chuckwalla's were ill or dead by now.
But I have no personal experience with cactus. They don't grow in our (tot cold and wet) country.
