Hi Dennis,
I can answer a few of your questions.
Iguana food is ok for Uromastyx too.
Just try all kinds of vegetables and so to vary the food.
Take a look at this site for the nutrients of the different vegetables.

Use Endive as a basic green. Kale can be given every now and than.
Give them also all kinds of dry beans, peas and corn and so.

Insects that are on Dandelions normally won´t heart your uro. Maybe the Uro´s eat the bugs. Plant-parasites will not harm your uro.
I keep my uro´s on dry playsand. This is ok.
