congratulations on getting the most intelligent and personable tortoise known to man. Ok so I am a little biased . I rarely see mine drink. I keep water with them at all times. They prefer dry conditions and easily develope shell problems if kept on damp substrate.I feed only as much as they will eat in 15 minutes and only about 5 days a week. They are gluttons and can easily over eat leading to shell pyramiding. Andy Highfield has an excellant videao outlining care.
