It's so hard to say, as Lisa said, there is a lot of variation in individuals. Tofu (originally was measured and weighed in metric, so forgive the odd conversion) was .88 ounces, 2.67 inches long at 3 mos. This was before we got her. At ten months (I'm guessing that's how old your sulcata is) she weighed 14.11 ounces, and was 4.72 inches. Too fast, I think. Today, Tofu has a bit of pyramiding, but not bad. I believe that we over-fed her initially. I now let her graze her fill in spring and summer (with very little supplemental greens), but only feed her every other day or so (sometimes every two days) in fall and winter. You would have to be very careful since your tort is so young.

All I can say, with the wonders of hindsight, is that if I had to do it over again, I'd feed less grass and greens, more hay, and try to replicate more closely how they feed in the wild...seasonally. (Obviously, I can't duplicate those conditions exactly, so it's only going to approximate.) I'm sorry this isn't more helpful.
