measuring & weighing the unruly Tofu

I have a question for anyone who's found a good way to measure and weigh a rather large tort. Okay, I know the measurement is supposed to be straight along the carapace, but how do you do this accurately? I have a hard time visually lining up at the front and back of the shell, all the while fighting to keep Tofu still (even with help, it's a battle if I'm not quick. I'm not.). I've been making due with the plastron measurement, not including gular projections, but would like to measure her more properly. Maybe I should just make do, hmmmmmm?

Also, she's about 14 inches long, 25 lbs. now at 5.5 yrs. If she's really a he, would the gular proj. already be larger? Would the plastron already be a bit concave? I don't really care too much if she's a he or a she, but am curious to know.
