Cal, I think you are the exception rather than the rule, but it's great to hear from you on this matter, and nice to know there are some PetCo employees out there that not only care but have the knowledge to care correctly. Keep up the good work!!! Where is your PetCo located? I would cut out the broccoli and cauliflower from the diet, and severely limit the fruits...broccoli and cauliflower aren't good to feed the Leopards...otherwise your diet sounds good. If you can sprinkle Panacur on the food, do that. It comes in granules...also comes in liquid if you can get that and just worm through the mouth with a feeding syringe. With the enclosure being so "enclosed", I would recommend keeping the basking spot at no hotter than 90F and the cool end somewhere around 75F or so...night temps can drop to about 72F. Rather than soaking twice a day for 1/2 hour (how do you get them to sit still for so long?), try lowering temps to better levels and soak only once per day. Also, these guys are going to need UVB lighting on them for about 12 hours per day. ReptiSun 5.0 bulbs are the best so far. Even if you don't have the means through PetCo to use these (which you should) then make sure you advise the customers that buy so they can provide proper care after purchase.
