The diet recommendations differ from the what is usually recommended. Spinach isn't a very good food, so there's not much reason to use it, and only in very small amounts if you do. I have not seen mushrooms listed for russians or any other semi-arid dwelling tortoise. Usually recommended for damp forest species. So I wouldn't include them in the diet. Stick to other things like weeds, grasses, greens (endive, mustard greens, collard greens, turnip greens), clover, a little squash and carrots, etc.
