Chop up the iceberg lettuce into small bits, make sure he will eat it in this form. Mix in a little of the good stuff (romaine, dandelion, weeds, other recommended foods). Each day slowly increase the proportion of good stuff, and less iceberg lettuce. After a few weeks you should have him eating the good stuff only.

You don't really need a light for hibernation, but it cant hurt.
