How much should a baby eat?

Jodi, my new baby sulcata, is only about 2" in size. How much should she be eating. One day it seems like she eats well and then the next not much at all. Also how do I get her to eat the good stuff for her. She only like to eat the romaine lettuce and not the grasses, mulberry leaves or dandilion leaves I give her. I have kept up with the lettuce only because I want her to eat. HELP???
