It really depends where you live, space available, etc. If you can keep them outdoors year round, you will have success. If you have to keep them indoors, go with a smaller species.

People have success with all the species you mentioned. Much of the success depends on the individual tortoises, health, etc. Pancakes produce the fewest eggs, Russians are the cheapest to obtain (wild caught), stars are the most expensive but breeding spiders or pancakes is probably best for conservation efforts.

It depends how much money you want to invest, and how patient you are. If you are just doing it for money you likely will get bored before you have success, if you really enjoy tortoises, success will come in time.
