Need Ideas for Hermann's Tortoise 75 gal tank setup, more...

I normally post on the turtle forums and the new turtle forum anyway, my older brother has a male hermann's tortoise, an eastern. Herman is about 4 inches. We have purchased a 75 gal tank for him which should be in soon. We got it at $1 per gal :). I posted on the new turtle forum but no one answered. Anyhow, here is what he will have in it so far:
Deep layer of coconut bark since he loves to tunnel
Water dish (he soaks himself)
a elevated food dish.
That is it. We temporarily have him in a 10 gal. The tank should come in Tomorrow. I want him to get more stimulation. Can I burry the pots of potted edible plants in the substrate? Also, I heard some potting soil can harm them, which should I avoid? I need more ideas to make his new tank fun and interesting for him. ANy input would be great. BTW-I have proper lighting too. Thanks again, and i'll see you around. I myself own 2 sliders, but get stuck caring for Herman, oh well, he's a cutie! Nad please mind the fact my T key doesn't work well, if you've seen my other posts, you can see it doesn't work well, and I"m osrry if I don't make much sense, I'm in a big hurry. Bye!
