: I have Hermann's tortoises and learned from personal experience and from others, that Hermann's are sensitive to excessive protein (causes pyramiding). Adding alfalfa to their diet was suggested but, it contains ~12% protein. That seemed very high.
: What would be considered a safe protein level? What other foods are high in fiber/low in protein?
: I feed Escarole, Endive, Dandelion, Romaine, Collards, Kale and what ever happens to be on sale that day. Occasionally I feed Corn, Green Beans, Carrots, Sweet Potato, Squashes and Tomato. I sprinkle calcium every feeding and vitamins weekly.

Hi, timothy hay can be added to the diet It is lower in protein than alfalfa ., or go out in your yard and cut fresh grass clippings ( no pestisides or fertilizers).When my tortoises cant go outside, I add the fresh grass clippings to their greens, it's a good source of fibre.
