You're not alone!
Check out the link below to the Minnesota Zoo.
They have Burmese brown torts, but under diet have put, "Unknown, probably grasses, suculents and fruits"!!!

Maybe you could email them and see what they feed
theirs.
Or you could join a Tortoise Email group such as the Tortoise Trust group:

It's free and you can unsub anytime. But it might help you contact more Burmese Brown keepers and help get you some hands on advise.
I know Shirley who posted at the Turtle Forum, (while this one was closed) has a Burmese Brown. Hers eats Mulberry leaves and canteloupe, she's also trying to expand the diet.
Look for her posts " Feeding Tortoise" at Kingsnakes Turtle forum. And maybe email her to exchange info.

Also, if you look through the archives to this forum you should come across posts by Richard Fife.
Email him too!
I think her has in the past, or still does, keep Burmese Browns.
