Hi Terry,
Horseradish is a sauce and a plant. The sauce is made from the ground up roots ( they have very big fleshy roots). The greens on top can be used in salads (early spring). When the leaves are mature, they can be 4 ft. long and are a beautiful dark green. It is a member of the mustard family. I'll see if I have the latin... Armoracia rusticana.
