I know nothing of this course but may I make a suggestion. If you don't already have one, buy a good book on tortoises. I recommend any of the books by Advanced Vivarium Systems. Philippe De Vosjoli wrote a book (The General Care and Maintenance of Popular Tortoises) Hermann's may be covered in it. He is a excellent writer on the care of Herps. A.V.S. books are sold in most reptile stores and online. The A.V.S. Herptoculture Library has books on the care, maintenance and breeding of just about every reptile kept as a pet today.
